This week’s Recipe: Whipped Cream from Scratch
As I mentioned in the first edition of this Newsletter, I don’t often bake or have a need for whipped cream (or indulge in cow’s milk or cream), except during the holiday season. But I do have young children who, once in a while, enjoy whipped cream over a scoop of ice cream, for example, and it’s just a good idea to know how to whip it up in your kitchen instead of buying highly processed, store-bought varieties like Reddi-Wip.

Ingredients
1 cup heavy cream - cold (take out from fridge when you are ready to use)
1 - 1.5 T confectioners sugar (I prefer less sweet so I use less sugar)
1 t vanilla extract
Preparation
Place a metal mixing bowl and it’s whisk attachment in the freezer for 10-15 minutes. Cold equipment ensures the cream whips faster and holds its shape better. Then, combine ingredients in mixing bowl, attach whisk and begin mixing. Turn the mixer to speed 2 (low) on your KitchenAid or similar for the first 30 seconds to prevent splashing. Gradually increase to speed 6-8 (medium-high) and whip for about 1-2 minutes (no more than that!). Keep an eye on the cream as it thickens. Stop the mixer when you see soft peaks for a light, fluffy texture. If you prefer firmer whipped cream, let it go a little longer until you see stiff peaks (tips stand straight when you lift the whisk). Avoid over-mixing as it can turn to butter. Use immediately or store in the refrigerator in an airtight container for up to 24 hours. Adding a dash of Amaretto or Grand Marnier is a tasty option.
